Our Story

What started as a dream over winter became our little piece of heaven by the lake. We converted our horsebox trailer ourselves, pouring every detail into creating a space where you can sit back with a great cup of coffee and take in the views across the water. As the son of Tom Stafford, who dug out and transformed this valley into Loch Mahon over 15 years ago, Shane grew up on these banks. Now, together with Joanne, they've added a new chapter to the story — one that smells of freshly brewed single-origin coffee and homemade sourdough toasties.

Your Lakeside Escape

Pull up a seat in one of our cosy pods, grab a coffee, and watch the world go by. Surrounded by three spring-fed lakes and rolling Wexford countryside, it's the kind of spot where you'll want to stay all afternoon.
